How About Some Mushrooms



The word mushroom (also known as toadstool) refers to the plump, spore-bearing body of certain fungus, which typically grows above the ground. As such there are hundreds of varieties of these fungi, most of which aren’t edible. In common parlance however, when we say mushroom we refer to the edible varieties, such as button mushrooms, Crimini, Portobello, Shiitake, Oyster, Enoki, Chanterelle and Porcini. Of those which are edible, many are used for medicinal purposes, in many traditional medicinal techniques.

These days, edible mushrooms are available in various forms. This includes not just fresh raw mushrooms, but dried mushrooms, pickles, chips, powdered mushrooms etc.

Now, mushrooms have been a part of many cuisines for centuries, their entry in the Indian kitchen is quite recent. And although they are indeed increasing their presence in the Indian markets with a growth rate of roughly 20%, they still continue to play second fiddle. A major reason for this might be the low shelf life, which is much lower in comparison to the KING VEGGIES like Potato, Onion or even Tomatoes. However, properly packed and refrigerated mushrooms can last a very long time.


Loaded with over a dozen vitamins and minerals such as copper, magnesium, potassium, and zinc as well as B vitamins, they also score low in fat, are cholesterol-free and have modest fiber content. Howvere what makes them really special is the high content of antioxidants such as glutathione and selenium. These are substances that can protect the cells from being damaged. They are also said to be helpful in chronic diseases and inflammation. As per some studies, mushrooms are also rich in another antioxidant, which is called ergothioneine, also called ERGO in short.

Being rich in antioxidants, makes them a great ally in fighting against cancer, and many studies suggest that regular consumption of this super food, can actually keep cancer at bay. Apart from that they are also good for your heart, since potassium helps in reducing the chances of hypertension or other cardiovascular conditions, whereas dietary fibers are said to be quite helpful in managing many other health conditions, which includes Type 2 Diabetes.
